Saturday of Souls/ The simple way to prepare the koliva

Tomorrow marks "Saturday of Souls" for Orthodox believers.

A day dedicated to memorial prayer for the souls who have passed away in the church, and later in the cemetery. Below we provide some information about the meaning of this day.

On such a day, it is traditional to prepare boiled wheat, or as it is otherwise known, Koliva.

Recipe for preparing boiled wheat (Kolivas)

Ingredients needed:

1- Wheat 1 kg

2- Crushed walnuts 2 cups

3- 1 and a half cups of sugar

4- 2 teaspoons of cinnamon powder

5- Parsley (if desired) two tablespoons

6- Thin raisins 1/2 cup

7- 1 teaspoon powdered sugar

8- Toast or biscuits 2 cups (or depending on the moisture content of the wheat).

Preparation:

1- Place the wheat in a pot and fill it with water 4-5 inches above the wheat.

2- Let it simmer for 20 minutes (until the wheat grains are soft).

3- After boiling as it is with hot water, cover the pot with a blanket and leave it for an hour. Then take the wheat and drain it.

4- After the wheat has drained, place it on a baking sheet and prepare it.

5- To absorb the moisture of the wheat, we add ground toasted bread. We can also add raisins, nuts, almonds, cinnamon for flavor, basil, and powdered sugar to the wheat.

6- Place the wheat on a plate, cover it with powdered sugar and decorate it by making a cross on top. /CNA
