Simple recipe base for anti-flu soup
This basic recipe can be customized with other vegetables (carrots, celery, sweet potato, kale) and a protein source (chicken, lentils, beans).
1 tablespoon olive oil
1 medium onion, diced
3-4 cloves garlic, minced
2.5 cm fresh ginger, minced or thinly sliced

Sauté: Heat the olive oil in a large pot over medium heat. Sauté the onion until softened and translucent (about 5 minutes).
Preparation: Add the garlic, ginger, thyme, oregano, and turmeric. Cook for 1-2 minutes until fragrant.
Simmer: Add the stock and bring to a simmer. Cover and let the flavors meld for at least 10-15 minutes.
Finish: Remove from heat and add fresh lemon juice and chopped parsley. Season with salt and pepper to taste.
