Our desire for sweets after a meal is a complex phenomenon influenced by various factors such as genes, environment and our food culture. However, there are a few key reasons why we might want dessert before we leave the table.

The first, most common answer probably has to do with how our bodies process carbohydrates. When we eat foods rich in carbohydrates, such as bread, pasta or rice, our bodies break them down into glucose, a type of sugar that our cells use for energy. 

In response, our body produces insulin, a hormone that helps transport glucose into our cells. However, when we eat a large amount of carbohydrates, our bodies can produce more insulin than necessary, which can cause blood sugar levels to drop quickly and significantly. 

This drop in blood sugar can lead to feelings of hunger and cravings for sweets.

Another possible explanation is related to the way our brain processes the feeling of reward. When we taste something sweet, our brain releases dopamine, a hormone associated with pleasure and reward. Over time, our brains can begin to associate eating sweets with these feelings of pleasure and reward, causing us to crave them more often.

Insufficient hours of sleep, along with stress, are two of the most powerful factors. The explanation lies in the fact that insufficient sleep can disrupt the balance of hormones that regulate hunger, such as ghrelin and leptin.
